I am not a fan of pumpkin. I really enjoy this pumpkin bar.
Judy (the people we are staying with) said she wants me to make the pumpkin bar for lunch.
The recipe is from Better Homes and Garden cookbook. I love this cookbook. It’s like a cooking bible! I hope to get it someday (maybe Christmas, maybe birthday, one of these days).
2 cups all purpose flour
1½ cups sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
¼ teaspoon salt
¼ ground cloves
4 beaten eggs
1 16 ounce can pumpkin
1 cup cooking oil
½ recipe Cream cheese frosting
Combine flour, sugar, baking powder, cinnamon, baking soda, salt and cloves. Stir in eggs, pumpkin and cooking oil till thoroughly combined. (I think we beat the wet ingredients before mixing with the dry ingredients) Spread batter into an ungreased 15x10x1 inch baking pan.
Bake in 350°C oven for 25-30 minutes or till a toothpick inserted near the center comes out clean. Cool on a wire rack. Frost with Cream Cheese Frosting. Cut into bars. Serve 48.
2 3-ounce packages cream cheese
½ cup softened margarine/butter
2 teaspoons vanilla
4¼ to 4¾ sifted powedered sugar
In a bowl, beat together cream cheese, butter and vanilla till light and fluffy. Gradually add 2 cups of powdered sugar, beating well.
Gradually, beat in enough remaining powdered sugar to make frosting of spreading consistency.
